Homemade Salsa with Local Heritage Tomatoes

I stumbled across the Bloor-Borden St Farmer’s Market last week. Its held in the Green P Parking Lot just south of Bloor between Borden St and Lippincott St. every Wednesday from 3-7pm from June 3rd to October 28th 2009. I bought a basket of heritage tomatoes, mostly because I fell in love with their lovely and bright colours.

We’re planning on heading to the cottage for the weekend and these were already ripe. Give that we can’t eat that many tomatoes in a day, I decided to make something with them. Not terribly surprising given my current canning streak, I decided to make some mild summer salsa. I used this recipe as a baseline, substituting some fresh basil (again from the farmer’s market) for fresh coriander. I added dried coriander as well, to keep the taste. I also used a red pepper instead of red & green, as I wanted to keep with the theme of the nice summer-y colours of the heritage tomatoes.

We boiled it down for about 15 minutes, in order to reduce the amount of liquid a little more. Then we canned it. We got 3.5 500mL jars. We put the three full cans in a hot water bath for 10 minutes. I sent the partial can home with Badur with orders to eat it over the weekend.

The final product! I really like how bright and light this mild salsa turned out. My plan for next week is to pick up some more tomatoes and make some spicy, red hot salsa. Maybe even try my hand at homemade tomato sauce. Its exciting!
